Watermelon Salsa

This is a surprisingly refreshing salsa. You gotta try it! 1 Liter Probiotic Jar

Ingredients

  • 24 ounces diced watermelon
  • .66 cup chopped cilantro
  • 1 small red onion chopped
  • 2 sprigs mint chopped
  • 2 sprigs basil chopped
  • 4 tbsp lemon or lime; juice only
  • 5 grams salt
  • .125 tsp cumin conversion: 1/8 tsp
  • chopped jalapeno teeny bit - optional

Instructions

  1. Mix ingredients in a bowl. I prefer to puree the lemon juice, salt and herbs together and a little of the watermelon to make enough juice to cover the ferment.
  2. Add mixture to Probiotic Jar and use a spoon to make sure all the chopped fruit pieces are below the liquid. Remove air pockets by stirring.
  3. Ferment at room temperature (if below 74°F) for 5 to 14 hours with the airlock. Move to fridge. Ferment away from direct light. If warmer than 74°F, then ferment in fridge with airlock for 24 hours.

Recipe Notes

Great as a cold "soup". We also love it grilled chicken or fish.
