Scrumptious Super-Quick Pulled Pork

You might want to double this batch, it's that good. Say goodbye to all-day simmering to make a tender mouth-watering pulled pork. Haul out your pressure cooker and have this ready to serve in 50 minutes (just 35 minutes under pressure). This is a perfect candidate for batch cooking and/or freezing. Warning, this tastes even better the next day if you can keep yourself form wolfing it all down the first night.

Ingredients

  • 3-4 lbs boneless pork butt cut into 2-inch pieces
  • 8 ounces Trader Joe's Organic Tomatillo & Roasted Yellow Chili Salsa or your favorite salsa
  • 12 ounces filtered water or stock
  • 2 tbsp coconut oil, lard, ghee, or bacon fat
  • 1 medium onion chopped fine
  • 4 cloves garlic or more, crushed
  • 2 tsp ground cumin
  • 1 tsp crumbled oregano
  • 1 tsp salt
  • 1 tsp white ground pepper optional

Instructions

  1. Heat oil or fat of choice in pressure cooker. Add onion and cook until softened, 5 minutes.
  2. Stir in oregano, cumin, garlic, salt and pepper for another minute.
  3. Add large handful of meat pieces and brown for about 3 minutes.
  4. Stir in salsa and water scraping up any browned bits from the bottom of the pan.
  5. Add lid and bring to high pressure over medium-high heat. When the pot reaches high pressure, reduce heat to medium-low and cook for 35 minutes (adjust as needed to maintain heat).
  6. Quick release pressure if you are in a hurry. Remove the pot from heat, and place in sink and run cold water over the lid until pressure is released. Or choose natural release pressure if time allows.
  7. Return pan to the stove top, stir and season with salt and pepper to taste. Shred with two forks and serve.

Recipe Notes

 

Optional: If you prefer a spicier meal, increase the cumin by another teaspoon.

Garnish Ideas: Chopped onions, cilantro, avocado, sour cream or shredded cheese wrapped in lettuce leaves or corn tortillas.
